Delicious & super healthy summer smoothie !

Ingredients:

Morning Glory!

 

Fresh pineapple in large chunks ( a handfull )

Half a fresh but ripe avocado

A small fresh cucumber

Fresh lemon or lime juice

A good handful of fresh cilantro

A good handful of baby spinach, or half a head of romaine lettuce you choose!

A chunk of fresh root ginger

Coconut water

Organic seed or pea protein powder (according to manufacturers instructions )

A little spirulina powder

Don’t fear this smoothies dark green colour & slightly mossy smell: spirulina is a form of micro-algae & is a super-healing detox ingredient.

Now that the seasons are changing & the cooler weather is not too far away, why not try this really hearty & warming soup…

Butternut Squash Laksa

 

 

 

 

 

 

Serves 6-8

Ingredients:

4 Lime leaves

600g Butternut Squash peeled & chopped into 1 cm cubes

3 red chillies, deseeded & cut into thin slices

2 lemon grass sticks, chopped

1 bunch fresh coriander

1 large thumb size piece of fresh ginger, chopped finely

3 cloves garlic, peeled & chopped finely

1 teaspoon cumin

1 teaspoon Chinese five spice

2 tablespoons coconut oil

1 large onion, peeled & thinly sliced

2 sticks celery, thinly sliced

200g brown whole rice

500ml Good quality organic vegetable stock

750ml organic coconut milk

Delicious! … Brilliant Beetroot Relish!

Bootcamp’s own brilliant Beetroot Relish recipe, full of healthy vitamins and goodness.

Ingredients:

250g cooked beetroot, peeled and finely diced
1 small chilli, deseeded and finely chopped
1 red onion, finely diced
1 tomato, finely diced
A small handful of fresh coriander, finely chopped
50-100 ml organic unfiltered apple cider vinegar
A pinch of white pepper and a pinch of pink Himalayan salt
50 ml good quality extra virgin olive oil  

Method:

Mix all the ingredients in a bowl, taste and adjust the seasoning in needed then cover and place in the fridge for about 30 minutes.

Put a little zest into your life…& your salad!

Orange & Dill Salad Dressing
Refreshing orange and dill salad dressing from the Real Bootcamp Spain’s selection of healthy recipes.

Ingredients:

Zest & juice of 1 orange ( unwaxed )
50ml apple cider vinegar
1 tbsp honey
250ml Extra Virgin olive oil
1 x handful of fresh dill, stalks removed
Pink himalayan salt & freshly ground black pepper
 Method:
Place all ingredients into a measuring jug, using a hand blender, blend until smooth. Taste & add more honey if too acidic or more orange juice & zest if a more orange flavour is needed.

Serves 6 people

Ingredients:

1 red onion chopped

2 cloves garlic

1.5 litre vegetable stock

180g red lentils

3 medium sweet potatoes peeled and diced

1 table spoon fresh ginger grated

2 tea spoons curry powder

1 tea spoon ground coriander

1 tea spoon cinnamon

1/2 tea spoon nutmeg

80z spinach roughly chopped

Juice of 1 lemon

Healthy recipe Thai Red Coconut Curry with Chicken & Rice

Thai Red Coconut Curry with Chicken & Rice
(Serves 4-6)
A thumb size piece of ginger peeled & finely diced
4 cloves garlic finely diced
2 medium onions sliced
1 stalk of lemongrass finely diced
2 teaspoons ‘Aroy D’ red curry paste
3 limes leaves
1 litre of ‘Aroy D’ coconut milk
200mls water
1 teaspoon fish sauce
Salt & pepper
Chopped chunky vegetables of your choice
1 small chicken breast per person – diced
Cook onions, garlic, ginger & lemon grass in a pan with a little coconut oil until soft.
Add the curry paste, fish sauce and coat the onions.
